Mozzarella sticks from string cheese

My Aunt posted a link on Facebook one day about homemade mozzarella sticks that were made from string cheese. Of course by the time I was ready to try the recipe I couldn't find the original post. So I went to Pinterest in search of the same recipe. I couldn't find the same, but I found one close enough that we decided to give it a try.
 
I started with 7 sticks of string cheese because, well that's all I had left in my pack.
 
 
Some breadcrumbs

 
Italian Seasoning

 
Parmesan cheese
 
 
Mixed my bread crumbs and Italian seasoning as well as some parmesan cheese

 
One egg - whisk the egg

 
Cut my cheese sticks in half 
 

 
Dip in the egg

 
Then into the breadcrumb mixture

 
Roll it around and coat it nicely

 
Place on a baking sheet and place in the oven at 350 degrees

 
They didn't come out very nicely, but here they are.

 
They must be eaten hot or they become tough to chew as they cool. I need to figure out a work around on the coating because I was not a big fan of it. The kids ate one maybe two of them but they did not finish this like they did my chicken nuggets which I posted about in my last post.

Homemade Chicken Nuggets

Trying to come up with a new dinner idea, I was looking for a recipe for homemade mozzarella sticks using string cheese. In this search I came across a recipe on Pinterest for these chicken nuggets.

What a hit they were! My kids went back for seconds and then thirds! I have never made any meal that they have wanted more after their second plate. How exciting!

I used 4 chicken breast tenders
Breadcrumbs which I seasoned with Italian seasoning and parmesan cheese as well as some salt
Olive Oil



 
 
Cut your chicken tenders (or breasts if you choose that route) into 1" cubes. Toss in olive oil

 
Toss in the breadcrumb mixture

 
Place on a baking sheet

 
Put in the oven at 350 degrees for 15 minutes turning half way through.
 
The kids were so hungry that I forgot to take an "after" picture because they dove right in. BUT these are by far the easiest and one of the best meals I've made according to my kids. They are also pretty healthy too!

Working late sucks

Here I am, it is almost 6:30pm and I am still at work. I came in at 6:30pm this morning. I have no end in sight with my work and I just want to go home and snuggle my babies.

I leave the house every morning by 5:45am to get to work at 6:30am. I usually leave work at 2:30pm and get home around 4:00pm.

Today is different. Today I stayed late to get things wrapped up before the long Holiday weekend. Most people have a 4 day weekend, but I am taking a 5 day weekend.

Andrew needs to have an ultrasound done tomorrow morning at 7:30am. He cannot eat for 4 hours beforehand so I will be up at 3:00am trying to force feed him a bottle (or breast) before 3:30am which is his eating cut off time. I am surprised they really expect an 11 month old to go 4 - 6 hours without food, but I am giving it a shot. I decided not to come into work due to the fact that I will be up at 3am and also because I do not see the point in driving 70 miles tomorrow while sitting in crappy Holiday traffic just to work 3-4 hours. I will work 5 hours from home instead.

I am hoping to get out of here by 7:00pm and then sit in crappy traffic and be home by 8:00pm (fingers crossed). I really need to see my baby boy today before he goes to sleep! I did have a pleasnt surprise when they showed up to have lunch with me today, but of course I dont think thats enough time with him, so I need to see him before bed so I can explain his day tomorrow to him.

Back to work I go!

Pinterest..... A Moms addiction

Today I have been inspired to write my blog more as an everyday working Mom. I love that I can possibly inspire people out there with the "cool" things I have found on Pinterest. Like my weekend project below.



I can't help myself but to spend countless hours a day on Pinterest looking for the next greatest idea.

Planning my sons birthday party has been its own amazing Pinterest experience. It was amazing to just type "fish party" and suddenly have a ton of ideas on things I could do and I was amazed I could put them in their own special "Fish Party" board for me to see. I will post a link to the party theme I chose as well as pictures from his 1st birthday party after it happens in December.

The greatest things I have recently discovered on Pinterest are the fact that I can have multiple people pinning onto a board on my account! For example, I made a board for  my nieces birthday and allowed my Sister to pin as well. How cool we can share ideas.

The other greatest thing that I am head over heels for is the secret boards!! My Sister & I own a business (www.mestinaschicboutique.com) and we always need new ideas and after having friends "steal" our ideas that we found I was very happy to come across the secret boards. Now we can start to pin again and not just bookmark all of our findings so others cant see where our inspiration comes from.

Why I want to blog

Since this is my first blog post I thought it would be best to start it with why I have decided to blog. I decided to blog because my life is hectic and stressful. I am very good at hiding my stresses and managing them, but sometimes I need an outlet. This blog shall be my outlet.

I am a new Mom to a wonderful, smart, handsome, caring, loving, amazing little boy. His name is Andrew and he is 6 months old. I cant believe how fast the time has flown by. Everyone always tells you how fast it goes, but you never really know until it happens to you. Well, it happens! I am a step parent to a beautiful, intelligent, trying 3 year old. I love her to pieces! I cannot imagine my life without her in it and she doesnt know a time without me in her life.

My relationship is complicated, as most are. We struggle daily to stay happy and together. Everyday is something new. If it isnt one thing, its another. We do love each other, but does that mean we are right for each other? We are asking ourselves the same question. We have a wonderful family and that is what is most important in our minds. We put our children before ourselves. Maybe we need a couples vacation? Someone to watch the kids for the weekend so we can run away and find each other again.

My job, I love my job. My job is so stressful yet I love it so much and besides my family, my job is what makes me the happy. Most days. I am tired of dealing with stupid people. I work with a lot of fun, smart people. Then you have to throw in the ones who just dont get it. They dont get anything. They drive me crazy and make me want to jump out the window or just shut my door and cry for their stupidity.

Please, enjoy my blog as much as I will enjoy writing it.
